Canterbury Biltong

All our meat used at Canterbury Biltong is Quality Mark export-grade topside steak supplied to Canterbury Meat Packers by farmers who are required to complete an Animal Status Declaration with strict guidelines controlling the feeding, handling and general care of the pasture fed animals.The meat processing works supply Canterbury Biltong with Manufacturers Declarations and use meat sourced and processed under New Zealand Beef and Lamb’s Quality Mark Standard.

The QualityMark Standard

The Quality Mark Standard ensures that the meat used is:

  • Sourced from New Zealand animals that have not been treated with growth promotants or reacted to TB testing.
  • Processed in licenced plants operating under a Quality Assurance programme covering animal welfare, food-safety and animal transport.
  • Traceble back to the producing farm or where it originated from.
  • Classified under an export classification system approved by the New Zealand Meat Board.
  • Processed using a prescribed and appropriate electrical stimulation, chilling and ageing regime to ensure the tenderness standard has been met by the time the product is on sale.

our manufacturing process

Below is a brief summary of our manufacturing process.

  • Export-grade, QualityMark topside steak delivered
  • All fat trimmed off before beef is sliced
  • Beef cured and spiced without the use of preservatives
  • Air dried in custom built dryers
  • Sliced into tasty bite-size pieces
  • Packaged in an inert atmosphere in a high oxygen-barrier pouch
  • Delivered to market with a 18 month best-before date from date of pack.
  • The end result is a protein and iron rich air-dried beef snack that is seen as a healthy food choice by our customers. More importantly it is an extremely tasty snack.
  • Every 100g of Canterbury Biltong uses at least 235g of Quality Mark beef.
  • Our manufacturing and food safety systems adhere to the specifications of the New Zealand Food Standard Authority and the Woolworths Quality Assurance 

Solar success

In December 2020 we installed 144, 380W Panasonic solar panels on our factory roof capable of producing 54.7KW of energy.

Our solar story has been a massive success both financially and environmentally.

During our first year of solar we were able to produce an enormous 66.70 MWH of energy!

We saw other benefits including a cooler environment inside our facility, on the roof and we were able to see when our power is being used and produced.

This led us to investing in energy efficient appliances including heat pump technology for our tumble drier and hot water cylinder while using these when our solar output is greatest.
